Nice photos. People rave about this mushroom but i wasnt a fan of the taste. But im not a huge oyster person.

I like it better than most oysters. it's a good producer.. but I still prefer chanty's

Sorry to be the obligatory fly in the ointment but this isn't a Hypsizygus, they don't have decurrent gills.

It's a very widespread misconception, even the much worshipped Stamets has his wires crossed about this one.

your right NSF, not Hypsizygus. the decurrent gills says it a Pleurotus.

deccurrent meaning the gills run down the stem (stipe).

I am at the end of grow (3rd flush) of a so called ulmarius oyster.

I started from print, I got from a Australian supplier of prints, cultures

and mushroom growing supply's.

I was suspicious from the start, because, there site did not show pic"s

of the gills. after selecting 8 nice sectors on agar, transferring to slants

and 2 substrates to grow out, I could not get them to pin at the recommended

10-13c. after 3 weeks I turn the temp up to 19c and they pined.

after the 3rd day, looking at the pins I knew I had a Pleurotus not a

Hypsizygus (my time screw with again).

ok, the good out of this is I selected 2 of these, 1 a nice pure white oyster

the other a grey/white oyster that both cook up nice for a oyster.

I thought hypsizygus were the shiim ji mushrooms?

I just made my first gourmet and medicinal grow attempt

and shimjii are one of the eight ive tried. : ]

Shimeji are Hypsyzygus tessulatus, I found them a couple of times in my neck of the woods, they are very pretty little things.

Hypsyzygus ulmarius is the 'real' elm oyster, but it's very rare in cultivation, this strain as said is actually Pleurotus.

And turkey tail, silver oyster and king oyster too ..
