As for bad side effects of post-extraction dilution in 3 to 2 proportions of water to pure ethanol, it is the same as vodka with the added kick of thujone. Warning: thujone can cause CNS damage. This being said, absinthe is still being sold. If you wish to counter the bitter taste you should expect, add lemon and salt, or lemon and sugar. [ 08.
