Food microbiology Q.

Can anyone suggest a reliable Australian based source of any of the following cultures for use in food preparation?

Koji: Aspergillus oryzae

Ontjom: Neurospora sitophila

Tempeh: Rhizopus oligosporus

Kombucha tea fungus: Tea ferment culture

Kefir grains: Milk ferment culture

I have been chasing leads for some time now, but they always go dead just when I think I’ve finally found what I’m looking for :(

I think I'm one of your dead leads- are you Josh W from QLD??

If so I'm sorry about that! :blush: work got abit frantic and I lost track of things for a while .- but saying that I am still keen to send you the cultures we talked about .

I only have the tempeh, Kefir I am expecting the koji to arrive late this week/ early next week - I have two seperate parcels arriving from Japan and the US. Both of which im really looking forward to!

watch this space! I will be back to let you know I have put them in the post! sometime in the next few days - The koji I would like to culture up abit, then send. So maybe just the tempeh and kefir to begin with.?

I also forgot to mention that i will have Natto bacteria( Bacillus natto) for the more brave among us... Me excluded...
