DiscoStu Posted May 10, 2016 and did you get sick? there's tons of agaricus pop up around my my work and they look firm and delicious but they turn a little yellow but i can't tell if they're horse field mushrooms or yellow stainers
Berengar Posted May 10, 2016 There are several non-toxic Agaricus species that stain yellow. A. xanthordemus smells really bad, very strong chemical or 'ink' smell, and it becomes more prominent when cooking. If it smells nice, 'mushroomy' or like almonds, it's probably fine.

Zen Peddler Posted May 11, 2016 Xanthoderma and other phenol-containing Agaricus stain yellow that fades as its oxidised within half an hour. Yellow staining in other Agaricus (usually almond-smelling species) does not fade.
