How deep do you think the roots would be? I would have to keep them in pots for a few months until moving house and putting them in the ground......

The roots are probably 20 cm deep and 30 cm wide, for the main mass of the root ball. You'd probably want to put them them in a 400 mm pot, tied to a support structure (fence/stake/pole) until they establish in the new pot, to prevent them from blowing over. The bigger ones at least. If you'll be moving soon, then I'd just chop them all into manageable lengths of about 60 cm, and stick them all in a big pot until you move. Then they'll be rooted and ready to plant out at your new place.
