If you want to get started with any type of cacti, then why not try your local nursery. I understand that you might want to grow something more "interesting", but it is probably a cheap way to learn about cacti and the nursery staff can provide you with information, etc.

Demineralized water should be fine if you are lacking rain. There are quite a few plants that are calciphobes - don't like calcium. I don't know about Coles water, it probably comes from a tap anyways.
