Michael, if you don't mind me asking, why do you keep them in such small pots? Is it so they are manageable when you have to move them in and out for winter?

I don't know mate, Ive never heard of a starter culture for sauerkraut. Usually it's just pounded to juice it up a bit, salted, weighed down and left in the cool dark til it's ready.
I guess the starter culture would give the lactobacillus a headstart on any other organisms that might spoil it. I think it's pretty important to keep air out of the fermentation pot. Traditionally water is poured over the lids which are specially shaped to stop air getting in.

Any members in Sydney or surrounds: my best buddy is having an exhibition of recent paintings with a distinctly psychedelic style. It opens on 6th August at Gaffa Gallery (281 Clarence st Sydney).

You gotta keep the shreds weighed down so there's no exposed bits while it ferments d00d, otherwise you'll end up with nasty funky mouldy fermented cabbage.

Dchiw you finally get around to knock on the door of the house with the gigantic scopulicola in the front yard, only to find that the house has been demolished when you arrive...on the upside I did score a few cuts of an equador pink brugmansia from another nice lady nearby.

I use terracotta for small pots when I can, the price of terracotta and plastic is pretty much the same for the 15cm diameter size at a local supplier.
