I've been making ginger beer for a few months now. Remember that if you use bakers yeast the highest alcohol content you can achieve is 3-5%, if you use brewers yeast you can achieve 20%+. Adding a little bit of cinnamon adds to the flavor and the sultanas are definitely necessary. If you're using plastic bottles then be sure to squeeze the air out of the top of the bottle (so its squashed in) then as the fermentation process produces CO2 it has extra room to fill before exploding. If you want to go a step further, 30L fermenters are available on ebay for ~$50 delivered. The fermentation process is great to watch under the microscope, a drop of ginger beer plant that hasn't been 'fed' for a day in a well slide or similar and add a little sugar to bring the process back to life.

Not sure about the specific melting points but wikipedia says to use cold water for the fermentation process, you may end up losing or disrupting the balance of alkaloids by using water that is too hot. Either way, that extraction is very black, perhaps it can be cleaned up with ethanol. Edit: Read more of the thread, I see you only want to use water perhaps to keep with tradition... fair enough. Perhaps a change to DI or distilled water might yield a cleaner product.

I've got the 505 and it's pretty neat, I wouldn't instantly bag out the grooveboxes as they can be a heap of fun for amateur music producers.

The biggest problem you will find will not be with the particular brand of PC, but the parts that are in it. For instance if you want a dual monitor setup, you'd be best to get a new videocard with dual outputs to replace your current card however depending on the connectors you have available on your motherboard ie. AGP instead of PCI-e might limit your upgradability. I'd recommend that you go to a local computer store, one that sells parts and pc's rather than one that just sells pc's and 'upgrades'. My local stores will build your computer for an extra $10 and i'd never had a single hardware problem with any pc i've had built there or built myself. However i've had a couple of Dell's and Hp's that i've been given and quite frankly they are horrible, the upgradability is there but it is limited by giant plastic things and stupid case designs. If you want a high end soundcard look at the external m-audio cards, it's what i use for all my recording.

i followed your lead, i went out and bought an x6... i'm in love! the only problem i have with the x6 is the lack of keys, so im controlling it with a 88 weighted key roland digital piano.
