Paleo is a good starting place, but the advocates tend to miss the mark a little. If your perspective is "how can I get the most nutrients into my body", as opposed to a dietary philosphy (ie what did paleolithic man eat, veganism, etc) then you should naturally swing towards high "good" fats and healthy proteins. Yet it should be light on the bacon, which contains a higher amount of pro-inflammatory omega-6 fatty acids, compared to grass-fed beef and lamb.
Is it possible to be a vegan and still eat for perfect health? I think so, but you need some specific supplements.
Personally, I try to live by "one life provides for many." So the more of 'just one animal' I can have in my freezer, the better. So long as that animal was healthy, then it is healthy for you too.
